Anyway...<br /><br />Jackie...so glad you enjoyed the fritters. I don't know if you saw the recent large version I did with broccoli. If you liked this one, you will enjoy that one too. I haven't made these in a while, but they can be difficult to keep from getting too brown...but I don't think the deep color affects the taste at all! The cook had a bit of trouble regulating the heat for cooking :) Otherwise they were fun to make and I enjoyed the leftovers, cold, the next day - all by myself. A great snack idea. Paige, after seeing the reference to Debra Maadison's cookbook I remembered I had purchased it 10 years ago. I dusted it off and have been re-visiting some of those collections of good food as well.
