I did change it the last 2 times to make vegan and I used 1:1 coconut oil instead of butter, 2 chia eggs, and coconut milk with a tsp lemon juice, then 1/2 C shredded coconut and it was so fantastic! I didn't have enough sour cream, and only lite type, but used nonfat Greek yogurt to make a full cup. I added a bit more butter to compensate. It turned out great. My mom used to make a pineapple upside down cake in an iron skillet, but I've never done one. Love the thinly sliced pineapple--makes it easy to cut and serve.
